The winery’s 2010 SAN SIMEON Cabernet Sauvignon, with fruit sourced from Paso Robles, is big and brooding. The tannins have formidable force, adding a layer of complexity to the concentrated flavors of dark fruit. Cedar is also evident. The standout characteristic of this wine, however, is the long finish that goes on for minutes.
