A must-have with oysters, sashimi, scampi, mahi-mahi or trout almondine, and crab legs or lobster with drawn butter, to name only a few tantalizing pairings. So versatile, so restaurant friendly. For regular folk, this is an affordable but elegant, sophisticated, stylish, crisp white wine that raises the bar on any social gathering. The 2013 DOMAINE DE LA PEPIÈRE Muscadet Sevre et Maine Sur Lie (intimidating long name? . . . nah), with notes of apricot, green papaya, lime and a hint of caramelized almonds, grips the palate with its granite and limestone stoniness and fresh acidity. Though best served chilled, this Muscadet [moos-kah-day] is anything but cold—it’s bursting with personality and approachable. The kind of wine the gastronomically adventurous will want to experiment with, it’s easy seeing this paired with many a Chef José Andrés creation. A foodie’s dream. –J.M.
